We accidentally bought a small jar of bread & butter pickles at our house, and even with 6 people, it took forever to get through them. Absolutely none wanted them.
I haven't watched her more recent videos but I would kind of disagree on that point. Her techniques and workarounds are still very much geared more toward "enthusiasts" than "home chef".
Which, ironically, means she is an amazing source of culinary instruction for youtube cooks. Which... pretty much tracks with the shitshow that was bon appetit.
But yeah. I put her more in the same category as the "expert" version of dishes on an Epicurious show or Binging with Babish (or most of the food network, back in the day) where I am watching people cook because the food looks amazing and less to get "inspiration". As opposed to stuff like the "101" version of dishes on an Epicurious show or Basics with Babish* where it is more about "what should I make for dinner next time chuck is on sale?"
