brown rice, ground round/lentils, diced tomato/onion/mushroom/yam/summer squash. fry up all the veggies/protein, make the rice, mix rice with fry-up, stuff the stuffing into peppers. top with vegan cheese if desired, brush oil onto outside of stuffed peppers, bake
A stuffing of zucchini, rice, onion, maybe some shrooms is always nice. Essentially a vegan gemista.
Edit. I've never precooked the peppers before stuffing, they still get nice and soft, especially if covered with foil. The recipe above seems overcomplicated, here is one that is more like what I have done. CW for second link, milk products, that can be left out just fine.
i bet bulgur would go crazy in the stuffed pepper
I cook almost entirely on vibes and couldn't find a recipe to link thats close enough to how I do stuffed peppers but basically
In a separate pan
Once done making stuffing
I'll swap out or add basically everything except for the peppers and the rice.
beans, veggies, cashew cream?
I feel like these could be altered to match whatever level of difficulty/effort you want to commit to preparing the stuffing as long as you have beans, garlic, onions, cumin, maybe another pepper or just cayenne, and cilantro but I haven't actually made it myself.
