- Depends on what do you for a living and what the alternative tool is. If you’re a professional creative that is working in a larger creative team, it’s hard to break free because of workflows, compatibility with oddball features, or you’ve hired people who are know how to fly at warp speed in CS, but are going to slow way down when they have to build muscle memory for a new tool. .

  I'd say you're better off actually ripping off the bandaid if you can.
  The more users that actually use Foss alternatives. The more the foss community will benefit.
- I use a lot of FOSS software but I tried replacing lightroom with darktable and I just couldn't, the UI was so bad
  
  The fork Ansel, is supposed to improve on the UI situation.

Spot on. Both Windows and Adobe (mostly the company) have become junk.
