It's hard to pick just one. The ones that get stuck in my head often are Majula, DS3 menu, Demon's Souls menu and the opening cutscene/main theme (with the horns), and the Elden Ring "Dragon" theme where it sounds like the choir is singing "Evil! Evil! Evil! Evil!"
