I’ve never crocheted a blanket. It is a big project I think I’ll tackle by crocheting one granny square a day for the rest of my life a few months, hopefully to get through my yarn stash of shame.
Edit: typo… though a “yawn stash” sounds accurate this morning.
Making squares into a blanket is a great way to do it :) And the squares themselves can be very satisfying just because they go from casting on to finished so quickly. It's nice to have something that works up fast, especially if you've got bigger things also on the go.

I made this simple one when I started crocheting a couple years back.
Very nice! Is that bernat blanket yarn? How did you find it to work with?
It is! I found it was decent to work with but it was a bit too bulky for my taste.
