Any guides on what e-readers can be jailbroken?
I'd like to buy one, but I'm kinda confused about which models can be jailbroken and their pros and cons. Ideally it would have a >6" screen and cost between 60-160 euros, 200 max
Kobo ereaders are great. You can install Koreader/Plato on it super easily. Even on the stock OS you can load epubs/mobis/etc. via USB.
Just to add to this. Interestingly enough Kobo brand runs Linux so it can be pretty easily modified. Tolino brand (the European brand name for the same Rakuten produced product) runs Android and is much more awkward to install different apps on.

What do you want to jailbreak it for? Depending on, you won't need to.
Boox just run normal Android out of the box, so you may be able to do what you want with one of those, no jailbreaking or OS flashing required.

I've had good luck with Pocketbook. They all run on a busy box kennel and can be pretty easily flashed. Since it's just running Linux, you can also just load in alternative interfaces as apps that just run on the existing kernel

Yeah, definitely one of the more hackable "just a reader" type devices. They tend to have most of the features you expect from higher end devices, just on a more stripped down platform.
Really good bang for your buck, and being able to just throw any format at it and have it work is nice.
