How do people find glory holes or dogging meetip locations?

I find the idea of strangers meeting up for sexual interactions interesting. I'm not interested in partaking in any sexual interactions, rather I would like to get a feel for the scene and perhaps have conversations with participants. Of course I would be accepting of LGBTQ interactions, but would prefer to have at least some straight/female-male interactions involved. I live in a decently-sized city. How could I go about finding some locations where these meetups occur nearby?

Your best bet would likely be FetLife. It's mostly BDSM folks but there's an overlap with the swinger community. Check out their communities, munchies and events. It won't happen overnight but I'm sure you'll find your people.

I'm going to just be honest - very extremely rarely will the person on the other side of a gloryhole be a cis woman if you're not setting up a prearranged meeting(that you're likely to be paying for). I know you say you're fine with same-sex or non-cis interactions, but I just want to make sure your expectations are set correctly.
If you're only interested in watching potential interactions you can probably check out your local adult bookstore(sex shop) and see if they have viewing booths set up in the back as they are the most likely to have booths with double-sided gloryholes.
Aside from your local bookstore you can try checking out holehunter.com to see if there's anything more discreet locally. There can also be private/personal gloryholes advertised on classified sites like Doublelist or cruising apps like Sniffies.
I don't know much about dogging, but swingers clubs may fill that more social and voyeuristic void for you as well. There's usually at least one in any given city, but you're unlikely to get in without a partner.

Try finding a swingers club in your area. Just being in a decent size city just searching "city name swingers club" should yield decent results. Alternatively if you start browsing local swingers subreddits you might be able to find lesser known clubs or events like hotel takeovers. I have been a local club few times and haven't participated much, but it is fun with the themes and skimpy clothing. As long as you aren't an asshole, they are usually very accepting of you having fun letting your suppressed freak flag fly.
Side note, highly recommend taking the BDSM test before going just so you know what you are into in case it falls in your lap the first time you go. Or you know what terms/labels you want to avoid.

I agree with swingers club but if you are going as a single guy it's usually either really expensive or hard to get in.
But one of the funniest things to ever happen to me was getting fucked by my husband in a swingers club, so into it, got off so hard I pushed him out, looked up and there was a crowd watching us, that was not there when we started and I was so centered on the sex I had no idea until we stopped. Laughed so hard.
On SLS or FetLife sometimes voyeurs will put a request, some couples like that alright.
